How to cook Fish in a crispy crust (in batter)?

Almost every Fish cooked in a recipe in beer batter in a deep fryer turns out to be crispy, and some even remain crispy for several minutes, but then the inevitable “dampness” sets in. With this simple formula and a few simple tricks, you can reach a level where the last bite is as crunchy as the first.

Some tips:

  • Use any white fish or any seafood you like; be sure to blot them by drying them in this way (significantly if the product has been thawed after freezing).
  • To make self-rising flour, mix 1 cup all-purpose flour with one teaspoon baking powder and 1/2 teaspoon acceptable salt. Corn starch or potato starch will also work in place of rice flour.
  • If you want to season your Fish differently, you can apply whatever you want directly to the Fish before it hits the beer dough. Keep in mind that salt draws out water, so don’t overdo it and make sure your Fish is as dry as possible before dipping it in ice dough.
  • If you prepare the dough in advance, that’s fine. Make sure to keep it in the refrigerator, and if you cook many servings, you can put the dough on a bowl of ice to keep it cool while frying.
  • If the dough does not stick to the Fish during frying, place the batter in the freezer for 12-15 minutes.
  • You can use sparkling mineral water instead of beer.

Step by step recipe:
1st – Whisk the self-rising flour, rice flour, and baking powder in a bowl. Set aside.
2nd – Pour the cold beer into the flour mixture and beat, adding as needed, until the dough is thick like a pancake. Please put it in the refrigerator.
3rd – If possible, blot the Fish to keep it dry, cut the Fish into pieces. Place the rice flour on a plate and season with salt. Sprinkle the mixture lightly over the Fish and shake off any excess. Line a baking sheet with foil. Lay the Fish out to dry.
4th – Please, heat oil in a deep fryer to 190 degrees celsius.
5th – Dip the fish pieces into the chilled dough to coat them; lift and drain off excess.
6th – Fry Fish in batches until golden brown. Place Fish on paper towels, letting excess fat drain off.
