Indispensable products:

  • 100 g of flour
  • 200 g of breadcrumbs
  • 2 eggs
  • 10 ml of milk
  • 10 g of garlic, crushed
  • 500 g chicken fillets
  • 200 g of eggplant
  • 60 ml of olive oil
  • 300 g tomatoes, thinly sliced
  • 30 g of fresh basil leaves
  • 50 g of mozzarella
  • 100 g of parmesan

Preparation of mixtures:

First – put the breadcrumbs on a deep plate. Put the flour on a second plate and season with salt and pepper. In a third bowl, preferably deep, beat the eggs, add milk and finely chopped or chopped garlic, then mix very well.

Second – then cut the chicken fillets or breasts into several portions. Try not to make them too thick, but of medium thickness or thin. For example, two chicken breasts can easily become 6-8 medium-sized chicken portions.

Third – first roll each piece of chicken well in the flour, then dip it in the mixture with the eggs, and finally roll it well in the breadcrumbs. Leave them all on one plate for a while while you prepare the next part of the recipe.

Cooking:

Fourth – take the aubergines and wash them well. Cut them into thin circles, then smear each with olive oil and season with salt and pepper. Heat a frying pan with olive oil over medium heat and cook the eggplant for a short time (2 minutes) until golden on both sides. Remove the prepared aubergines and place them on a plate.

Fifth – the remaining olive oil in the pan (you can add) reheat it and cook the chicken, but only until golden on both sides.

Sixth – before placing the products in the pan, smear the bottom with olive oil. Put the chicken in the pan, place the eggplant on it, then place the thinly sliced ​​tomatoes, sprinkle with basil and place a slice of mozzarella and grated Parmesan. Bake in the oven under the grill until the parmesan is melted. Baking time – between 5 and 10 minutes depending on the rate of melting of the parmesan.
